Respecting the knowledge acquired over several generations, this Almeida & Filhos sausage of dark color and intense flavor, is elaborated from bloody meat shavings and rich and aromatic seasonings. Its cure is carried out in three phases: in the first it receives only heat and in the second phase it goes to smoke the wood of holly, which gives it a more traditional flavor. Finally, it goes to dryers with controlled humidity and temperature until ready to pack.
