Almeida & Filhos' black chorizo is prepared from soft pork fats, in a very fine chop. The flavoring of these brisks includes wine, salt, cumin, onion, among others. They are filled in thick natural casing and then they undergo a thermal process (baking), after which they cool down in drying until they are packed. They are eaten cooked. They are indispensable in any feijoada or traditional Cozido à Portuguesa.
